Missus' Marvelous Muffins

The Missus has been tinkering with her muffin recipe to make it tasty, yet healthy enough to be consumed by even the most nutritionally discriminating members of the household.  No, I'm just concerned about the tasty side, it's my three ladies that worry.

She is pretty pleased with her current version and thought I should share it with the blogging community.  And since it does measure up to my exacting palate here goes:

Missus Marvelous Muffins:

3 crushed ripe bananas
1 ripe pear, mashed
2 eggs
1/4 cup ground flax
1/2 cup bran
1/4 tsp salt
1 tbsp cinnamon
1 tsp vanilla
1 cup of raisins
1 cup chopped dates
1 tsp baking soda
1 tsp baking powder
1 cup whole wheat flour

1. Mash the fruit and add to a mixing bowl.
2. Add eggs, mix well.
3. Add rest of ingredients in order, making sure the flour is last.

A cup of grated carrots is optional (no alteration of other ingredients is necessary).



Bake at 350 F for 20 minutes.



Note the muffins are both fat-free and sugar-free. Of course, yours truly prefers them with a generous dollop of butter - the Missus cringes!

  2. Looks yummy! But tell her you need the butter to deliver the fat soluble viramins to the needy cells! :-)

  3. The Missus may have done a lot of work making the muffins, but you did a great job in showing us how they were made. Very tempting stuff.
